VINE-GROWING AND WINE-PRODUCING FARM

FATTORIA BELVEDERE
 

Counts Ceramelli Papiani, owners and vine-growers of Fattoria Belvedere, have been producing wine for many generations, bottling it on the farm. The vineyards stretch over the plateau between Colle di Val d’Elsa and Monteriggioni, 250 m a.s.l., on Quaternary, calcareous soil.
The main wine production is that of CHIANTI COLLI SENESI DOCG, which averages 30,000 litres per year.
 

 

CHIANTI COLLI SENESI is one of the seven subareas of the name of controlled and guaranteed origin of Chianti wine, the Tuscan wine by antonomasia, which has made its region of origin famous throughout the world and maintains Italian oenology at a very prestigious level.
The basic species of grapes are Sangiovese (75-90%), black Canaiolo (5-10%), Tuscan Trebbiano and Chianti Malvasia (5-10%).
“Fattoria Belvedere” Chianti Colli Senesi wine is characterised by a lively, ruby-red colour; and an intense, winy bouquet with traces of violet; its has a dry, harmonious, sapid, slightly tannic taste, lively and full.
Alcoholic strength exceeds 12°.
This is a wine for the “whole meal”, excellent with pasta and meat sauce, boiled meat and stews, but also very pleasant with roasted white meat and not very ripe sheep-s milk cheese.
Also produced in the “RESERVE” type.

The Fattoria Belvedere WHITE WINE is produced with Tuscan Trebbiano and Chianti Malvasia grapes, harvested at a good point of ripeness and processed with a longer maceration of the skins.
The result is a straw-yellow wine with a characteristic winy bouquet, a very fresh, dry, harmonious and mellow taste and a slightly bitterish aftertaste.
Alcoholic strength is around 11.5°.
This wine is to be served young, with hors d’oeuvres, pasta with vegetable dressings, soups, and vegetables. Excellent with omelettes and fried food in general, it is worth a try with Tuscan cold cuts.

AULICO. The result of meticulous selection of the grapes, this wine is made only from perfect bunches of Sangiovese grown in old vineyards, brought into the cellar, subject to a further selection process and left to macerate, controlling the fermentation temperature with the use of water from the adjacent well. Maceration usually lasts between twenty-five and thirty days, ending the cycle with racking off into small barriques, some of which are new with the others being used for the second time.

AURORA. Despite being the newest arrival at Fattoria Belvedere, its youth does nothing to detract from the fact that this wine has great character and a strong personality, qualities which Lorenzo Ceramelli Papiani intended to convey to a product which represents the true “aurora” of the company. After traditional fermentation and maceration, the Merlot is blended with some Sangiovese. Transferred into new, well-toasted oak barrels, it is left to mature in the cellar for a year. After slight pre-coating it is aged in the bottle, without any fining so that only the grapes blended in the new barrels carry the flavour of the land in which Aurora is born to the palates of those who taste it.
The new Merlot grape variety introduced to add a particular touch to the wines was named after the newest member of the family, Raffaele Ceramelli’s granddaughter, Aurora. Two important new additions which highlight the desire to work towards the production of ever higher quality, a desire which is enhanced by meticulous research and love so that every piece of Belvedere land is able to enjoy a perfect relationship with the grape variety cultivated on it.

GRAPPA is produced by distilling Chianti wine marc according to law. This Grappa has a brilliant white aspect and an intense bouquet of marc. It has a warm and harmonious taste, with an intense, characteristic flavour.

Alcoholic strength is around 40°.

VIN SANTO is one of the most significant products of the Tuscan wine tradition, as a wine with this name has been produced since the middle of the 14th century.
Vin Santo has always been the wine of hospitality and friendship, which was never missing in the houses of nobility and farmers alike; a wine to be drunk at any time of day, although preferred at the end of a meal.
Today it is still produced according to the original method: from the choice of the best bunches of grapes, to drying on mats or grates, followed by a long period of ageing in small wooden barrels known as “caratelli”.
The Vin Santo of Fattoria Belvedere is made with Malvasia del Chianti and Trebbiano Toscano grapes withered on grates. A minimum of four years in the barrel is followed by another year in glass demijohns before bottling.
It has a deep amber colour, a warmly intense perfume and a sweet, smooth, velvety, warm and round flavour. The alcohol content is approximately 16°.
This wine is traditionally served at the end of a meal with dry pastries, cantuccini, jam tarts and traditional Sienna patisserie.
